Instructions
- Mix oil, lemon juice, garlic, oregano and salt. Add the chicken and marinate at least 30 minutes, or up to 8 hours in the fridge.
- Meanwhile, stir the yogurt, cucumber, grated garlic, 1 tbsp lemon juice and a pinch of salt for the tzatziki.
- Thread the chicken on skewers (soak wooden ones for 30 minutes).
- Grill or broil over medium-high heat 10 to 12 minutes, turning, until browned and the chicken reads 165°F (74°C).
- Serve in pita with tzatziki, tomato and red onion.
🌡 Food safety: Cook poultry until the thickest part reaches an internal temperature of 165°F (74°C) on an instant-read thermometer. Wash hands and surfaces after handling raw meat, poultry, seafood or eggs, and refrigerate leftovers within 2 hours.
Tips for success
- Squeeze the grated cucumber well to avoid watery tzatziki.
- Do not marinate longer than 8 hours in lemon; the texture gets mealy.
Substitutions
- Pork shoulder is traditional.
- Use lettuce wraps for a low-carb meal.
Storage & reheating
Refrigerate cooked chicken 4 days; tzatziki 3 days.
