Ingredients

US measurements with metric in parentheses.

Instructions

  1. Bring the water to a simmer in a saucepan. Stir in the dashi powder (or simmer the kombu for 5 minutes, then remove).
  2. Add the tofu and wakame and simmer 2 minutes.
  3. Reduce the heat to low. Ladle some hot broth into a bowl, whisk in the miso until smooth, and stir it back into the pot. Do not boil.
  4. Serve topped with green onions.

Tips for success

  • Boiling miso dulls its flavor and aroma.
  • Taste the miso first; brands vary in saltiness.

Substitutions

  • Add mushrooms, spinach or cubed daikon.
  • Check the dashi powder label; many contain fish (bonito), so use kombu for vegan.

Storage & reheating

Best fresh; reheat gently without boiling. Keeps 2 days.
