Instructions

  1. Whisk flour and oil in a heavy pot over medium heat. Stir constantly 12 to 15 minutes until the roux is the color of peanut butter.
  2. Add onion, pepper and celery and stir 5 minutes, until softened. Add garlic for 30 seconds.
  3. Slowly whisk in the broth. Add chicken, sausage, seasoning and bay leaves.
  4. Simmer uncovered 30 minutes, skimming any foam, until the chicken reads 165°F (74°C) and the gumbo is lightly thickened.
  5. Remove the bay leaves. Serve over rice with green onions.

🌡 Food safety: Cook poultry until the thickest part reaches an internal temperature of 165°F (74°C) on an instant-read thermometer. Wash hands and surfaces after handling raw meat, poultry, seafood or eggs, and refrigerate leftovers within 2 hours.

Tips for success

  • Never walk away from the roux; it burns fast and burned roux cannot be saved.
  • Gumbo tastes better the next day.

Substitutions

  • Add sliced okra with the vegetables.
  • Use shrimp in the last 5 minutes.

Storage & reheating

Refrigerate up to 4 days; freeze up to 3 months without the rice.
