Instructions

  1. Heat the oil in a large Dutch oven over medium-high heat. Brown the sausage 4 minutes, then the chicken 5 minutes. Remove both.
  2. Cook the onion, pepper and celery in the drippings 5 minutes. Add garlic and Cajun seasoning for 1 minute.
  3. Stir in tomatoes, rice and broth. Return meat to the pot and bring to a boil.
  4. Reduce heat to low, cover tightly and cook 20 to 25 minutes without lifting the lid.
  5. Remove from heat and rest, covered, 10 minutes. Check that the chicken reads 165°F (74°C).
  6. Fluff with a fork and top with green onions.

🌡 Food safety: Cook poultry until the thickest part reaches an internal temperature of 165°F (74°C) on an instant-read thermometer. Wash hands and surfaces after handling raw meat, poultry, seafood or eggs, and refrigerate leftovers within 2 hours.

Tips for success

  • Do not stir while the rice steams or it turns gummy.
  • Taste your Cajun seasoning; blends vary widely in salt and heat.

Substitutions

  • Use shrimp, added for the last 5 minutes.
  • Smoked turkey sausage lightens it.

Storage & reheating

Refrigerate up to 4 days; freezes well for 2 months.
