Instructions
- Season the beef with salt and pepper.
- Heat 1 tbsp oil in a wok or large skillet over very high heat. Sear half the beef 1 to 2 minutes until browned. Remove, repeat with the rest.
- Add the remaining oil, onion and garlic and stir-fry 1 minute.
- Add the tomatoes, soy sauce, vinegar and aji and toss 1 minute. Return the beef.
- Toss for 30 seconds and sprinkle with cilantro. Serve at once over rice with fries.
🌡 Food safety: Cook whole cuts of beef, lamb and pork to at least 145°F (63°C) inside, then let rest 3 minutes before slicing; ground meat needs 160°F (71°C). Wash hands and surfaces after handling raw meat, poultry, seafood or eggs, and refrigerate leftovers within 2 hours.
Tips for success
- A very hot pan gives the beef its smoky char.
- Cook in batches so the meat sears, not steams.
Substitutions
- Chicken breast works (cook to 165°F / 74°C).
- Tamari makes it gluten-free.
